INGREDIENTS
2 ripe avocados, peeled and pitted
3 oz 85% dark chocolate, melted and cooled
3 tablespoons unsweetened cocoa powder
3 tablespoons unsweetened almond milk
2 tablespoons stevia or monk fruit sweetener
1 teaspoon vanilla extract, pinch of salt
Fresh raspberries or strawberries to serve
Smart Swap
Sweetener Note: Stevia and monk fruit are zero-glycemic sweeteners — perfect for diabetes. Avoid honey or maple syrup which still raise blood sugar.
Chocolate Tip: The higher the cocoa percentage, the lower the sugar. 85% or 90% dark chocolate is best for diabetics.
INSTRUCTIONS
Melt Chocolate
Break 85% dark chocolate into pieces and melt in microwave in 30-second intervals, stirring between each, until completely smooth. Let cool to room temperature before using.

Blend
In a food processor, combine ripe avocados, cooled melted chocolate, unsweetened cocoa powder, almond milk, stevia sweetener, vanilla extract, and a pinch of salt. Blend until completely smooth.

Taste and Adjust
Taste and adjust sweetness with additional stevia if needed. Add more almond milk 1 tablespoon at a time if the mousse is too thick.

Chill and Serve
Divide into 4 small cups or ramekins. Refrigerate at least 30 minutes. Serve topped with fresh raspberries or strawberries.
